Friday night was football game night. It was cool outside, and we needed to eat before the game, so I needed something quick, but warm and hearty. And of course, being me, I wanted a little spice! This soup was all that and more! Hope you like it!
- 1 cup Parmesan cheese
- 1 TBS corn starch
- 1/2 onion, chopped
- 2 TBS butter
- 3 cups chicken broth
- 4-6 smallish red potatoes, cubed, skin on
- 1 TBS Chipotle peppers, diced. BE SURE to scrape out the seeds, or this can get pretty hot, pretty quick! Ask me how I know***
- 8 oz. cream cheese
- 1+ cups milk
- 2 cups cooked chicken
- 1 TBS parsley
In dutch oven or soup pot, saute onion in butter till tender. Add chicken broth, potatoes, and chilies. Cook until potatoes are tender, about 20 minutes.
Add cream cheese and stir until completely melted. Add one cup of milk, chicken, parsley, and Parmesan/corn starch mixture. Stir until cheese is melted. The cornstarch will further thicken the stew. If you find it's thicker than you prefer, then you may add more milk.
***The Chipotle peppers are the star ingredient of this stew. You'll find them very easily in the Mexican food section of your grocery store (I use Kroger). They come in a small can that reads: Chipotle Peppers in Adobo Sauce.

This looks very similar to a recipe I've been looking for for years that uses green chiles. I imagine if I just substitute green chiles for the chipotle, I may find what I've been looking for!
Not to say that I won't try your creation as is - I will, for certain!

I made this last week!!! It was GREAT! I loved it. I can get spicy fast so added a little extra milk to the kids and mine and that helped tone down the heat for us but DH likes it spicy! Loved It it went in my keepers recipe file!Thanks
